Slow Food Cymru Wales is part of the wider Slow Food in the UK and Slow Food International movements. We are a national group working at regional levels, developing our networks across the country, with one simple mission: good, clean and fair food for all. Everyone is welcome.

We link the pleasure of good food with a commitment to the local community and the environment. We want you to reconnect with where your food comes from and how it is produced, so the choices you make start to matter.
Wales is renowned worldwide for the quality of its produce. From the land and the sea, Welsh products are sought after everywhere. Our aim is to preserve that biodiversity and heritage for future generations.
Ark of Taste · Arch Blas
The Ark of Taste seeks out the forgotten foods that are in danger of being lost to fast-paced lives and intensive production.
By finding these products, telling their story and championing the small-scale producers behind them, we can safeguard traditional Welsh food and bring it back to the market. Seven Welsh products are already aboard the Ark, and we are working to add more.

A hardy hill breed from the valleys and uplands of south Wales, shaped by centuries of grazing on rough mountain pasture.
Livestock
A fresh, crumbly cow’s milk cheese with deep roots in the mining valleys. Farmhouse versions, matured properly, are a world away from the industrial block.
Dairy
Traced to a single old tree on Ynys Enlli, off the tip of the Llŷn Peninsula, and believed to be found nowhere else in the world.
Fruit
Distinctively marked mountain sheep, known as Torddu and Torwen for their dark and light bellies. An old Welsh hill breed.
Livestock
A white, lop-eared native breed and one of Britain’s rarest pigs. Prized by butchers and curers for the quality of its meat and fat.
Livestock
Gathered by hand from the sands of the Burry Inlet on the Gower, by families who have worked the same beds for generations.
Seafood
Grown in and around Denbigh in north Wales and almost nowhere else, ripening late and celebrated locally every autumn.
Fruit
The Ark grows by nomination. If you produce, sell or simply remember a Welsh food at risk of disappearing, we want to hear about it.

Cooks Alliance · Cynghrair Cogyddion
Through the Cooks Alliance we work with local cooks and chefs who share our values and who champion sustainable food and local producers. We encourage them to build their menus around ingredients from the Ark of Taste, so the foods worth saving end up where they belong: in front of people, being eaten.
We are actively looking for new members, and applications are very welcome.
