What it is
Cooks who buy the way they cook
Through the Cooks Alliance we work with local cooks and chefs who support our values and who promote sustainable food and local producers. It is an international Slow Food network, and in Wales it is how the movement reaches the public most directly: through what turns up on the table.
We also encourage members to use ingredients from the Ark of Taste in their menu creation. That matters more than it might sound. A product only survives if somebody buys it, and a chef who commits to a rare breed or a heritage variety gives the producer a reason to keep going.
We are actively seeking new members, so applications are very welcome.
What members commit to
A short list, seriously meant

Buy local and seasonal. Build menus around what Welsh growers, farmers and fishers actually have, at the time they have it.

Name your producers. Tell customers where the food came from and who made it. Recognition is part of the payment.

Cook the Ark. Find a place on the menu for at least one Ark of Taste product, and keep it there.

Protect biodiversity. Favour native breeds, heritage varieties and fishing that the sea can stand.

Share what you know. Take part in events, teach, and bring other cooks into the network.

Pay fairly. Good, clean and fair applies to the people in your kitchen as much as to the people who supplied it.

Cook in Wales? We would like to hear from you
There is no application fee and no minimum size. We work with restaurants, pubs, cafes, street food traders, bakers and caterers. What matters is the sourcing and the intent, not the number of covers.
